A BRIEF HISTORY OF “LE TAILLEVENT”…
This institution deserves its reputation without fail thanks to its founding father – André Vrinat – who gave it the destiny it has enjoyed since 1946. André Vrinat was a pioneer – he was the first in Paris to break away from the hegemony of Bordeaux wines and offer other terroirs, notably Burgundy – and his wine list became an incunabulum of a cellar book. His passion for wine is something he likes to share with his customers, whom he welcomes as friends, and this is what illustrates Taillevent Paris over time: a Maison of initiates, forever legitimate. Alain Solivérès, who officiated for almost 18 years, embodies the bourgeois cuisine so dear to the House.
