Meet Stéphane Aignel

It is a true honour to join this legendary House, the custodian of a unique gastronomic heritage. My ambition is to uphold and radiate the spirit of French hospitality, guided by excellence, emotion and the transmission of savoir-faire.

As Head of Le Taillevent, the iconic two-Michelin-starred restaurant, Stéphane Aignel embodies a demanding yet deeply human vision of hospitality. His outstanding career has taken him through some of the world’s most prestigious institutions, including Guy Savoy, Daniel Boulud in New York and Alain Ducasse, before joining Epicure, the three-Michelin-starred restaurant at Le Bristol, where he successively held the positions of Maître d’Hôtel and Restaurant Director. These exceptional experiences have shaped his approach to hospitality, rooted in elegance, precision and the finest traditions of French service.

By joining Le Taillevent, a House founded in 1946 and a symbol of the French art of living, Stéphane Aignel naturally becomes part of a legacy of excellence, carrying forward its spirit and savoir-faire. His commitment to precision, thoughtful attention to every detail and the constant pursuit of perfection finds a natural home here, serving an experience that remains true to the soul of the House.

Alongside Chef Giuliano Sperandio, he forms a close and complementary partnership, where the creativity of an inspired cuisine meets the excellence of dining room service. Together, they are dedicated to offering guests an experience that is both timeless and distinctly contemporary.

Through his commitment, Stéphane Aignel embodies Le Taillevent’s ambition to continue its tradition of excellence while embracing a contemporary vision of the great French restaurant.
